Cuối năm rồi, mình lại loay hoay với câu chuyện bánh mứt cho ngày Tết. Dạo chợ cũng thấy được tắc vàng tươi ngon nên mua một mớ về làm món mứt tắc dẻo ngọt để dành dùng dần.
Mình chọn loại tắc có màu vàng sên mứt xong sẽ có được màu vàng óng đẹp mắt hơn. Tắc mua về đem ngâm trong nước ấm 1 lúc rồi rửa sạch. Dùng dao cắt 5 đường dọc theo trái tắc. Ấn nhẹ trái tắc cho hơi dẹp, loại bỏ hạt tắc.
Xếp tắc đã lấy bỏ hạt vào nồi, thêm vào 180g đường phèn, nửa chén nước lọc. Đặt nồi tắc lên bếp đun ở nhiệt độ thấp cho đường tan.
Bạn sẽ tiếp tục đun, thỉnh thoảng đảo đều cho đến khi tắc trở nên trong và nước đường phèn dày kẹo lại là được nhé! Tắt bếp rồi để yên cho tắc tự nguội.
Mứt tắc nguội là có thể dùng. Khi dùng không hết bạn có thể cho mứt tắc vào hũ thủy tinh, đậy kín bảo quản trong ngăn mát tủ lạnh sẽ dùng dẫn được trong thời gian dài. Món mứt tắc không chỉ ngon miệng mà còn giúp chữa ho hiệu quả nữa đấy!
