Cánh gà sau khi mua về rửa thật sạch với muối, nếu còn lông gà nhớ nhổ sạch hết nhé. Ướp thịt gà với 1 muỗng cà phê nước tương, 1 muỗng canh bột bắp, 1 muỗng cà phê đường, 1/4 muỗng cà phê dầu mè, 1/4 muỗng cà phê muối, 1/4 muỗng cà phê tiêu và để trong 1 giờ cho thấm gia vị. Ớt cắt khoanh, tỏi bóc, băm nhỏ. Trứng muối luộc chín, bóc lấy phần lòng đỏ và đem nghiền nhuyễn mịn.
Làm nóng chảo với dầu ăn, cho cánh gà vào chiên vàng đều hai mặt, gắp ra dĩa để riêng. Chuẩn bị một chảo khác, cũng làm nóng và cho bơ vào, đun chảy rồi thêm tỏi, ớt bằm vào phi thơm.
Sau cùng thêm lòng đỏ trứng muối tán mịn vào đảo đều rồi cho cánh gà vào đảo nhanh tay để trứng áo xung quanh cánh gà rồi tắt bếp. Cánh gà được áp chảo giòn ngon kèm theo lớp trứng muối mằn mặn, beo béo bên ngoài càng kích thích vị giác người ăn, chỉ cần cắn một miếng là mọi hương vị thơm ngon đều ngập tràn trong khoang miệng.
