Cho vào nồi nhỏ gồm: 50g đường nâu, 50g nước đường, 40g bơ và 2 muỗng cà phê bột quế, đun nhỏ lửa đến khi đường và bơ tan hết. Để hỗn hợp nguội rồi cho 1 lòng đỏ trứng vào quấy nhuyễn.
Trộn chung 220g bột mì, 1 muỗng cà phe bột nở(baking powder) và 1/8 muỗng cà phê muối, sau đó cho vào hỗn hợp nước đường ở trên và nhào đều đến khi bột mịn thành khối. Cán bột mỏng ra và cắt thành những hình dạng cookies tùy ý.
Bật lò ở 180 độ C trước đó khoảng 15-20 phút, xếp bánh quy đã cắt vào khay(cookies), cho vào lò nướng 10-12 phút đến khi bánh chín vàng nâu là được. Để bánh nguội hẳn là có thể dùng. Có thể bảo quản kín dùng dần để bánh vẫn luôn được giòn.
